Homemade pancakes

Tired of the pancake mix in the box?  Want something a bit more, perhaps with your own touch?

Here is a homemade buttermilk pancake mix.  No buttermilk, no worries, we’ll make some … read on.

Here’s what you’ll need:
1 and 1/2 cups milk
1/4 cup vinegar
2 cups flour
1/4 cup white sugar
2 teaspoons of baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1/4 cup melted butter
2 teaspoons of vanilla extract (experiment with “double” vanilla, it’s good)

Now to pull it all together:
Combine the milk and vinegar (yup we’ll get that “buttermilk”) and let sit for about 5 minutes to sour.

In a large bowl combine flour, sugar, baking powder, baking soda, and salt.

Go back to the soured milk now and add the eggs and melted butter; now whisk.

Now we put it all in the same big bowl and mix until you don’t see any large lumps in the batter.  Add the vanilla and whisk some more.

Now you’re ready to cook the batter!

I use a skillet at 350.  If you haven’t cooked pancakes before remember to watch them until bubbles appear, then flip until browned on the other side.  Yes, after a minute you can start checking them by lifting and peaking if you must until you get a feel for it.
