London Broil – Marinated

Ever had a top round or London Broil steak you wondered what to do with it?  Usually an inexpensive cut you can put to mouth-watering use.  Let’s see, what will we need here … ah yes …

What you’ll need
* 1/2 cup chopped shallots
* 1/4 cup soy sauce
* 3 tablespoons fresh lemon juice
* 3 tablespoons balsamic vinegar
* 1 tablespoon olive oil
* 2 teaspoons fresh thyme
* 1 teaspoon dried oregano
* 4 garlic cloves, minced
* 1 (2-pound) boneless top round steak
* 1/2 teaspoon salt (I use sea salt)
* 1/4 teaspoon ground black pepper

Now to put it all together

First…
Trim the steak, tenderize it – yeah hammer time (or is that hammer time? *shrugs), and then combine first 8 ingredients in a large zip-top plastic bag.  Add steak to bag and seal.  Marinate in refrigerator 2 hours, turning every 30 minutes.

Next…
Preheat broiler.

…And finally,
Remove steak from bag and discard marinade.  Scrape shallots and garlic from steak and discard shallots and garlic. Place steak on a broiler pan coated with cooking spray.  Sprinkle steak evenly with salt and pepper.  Broil 4 inches from heat for 6 minutes on each side or until desired degree of doneness.  Let stand 10 minutes before slicing against the grain.
